Once you have tried your own homemade soup made from your own stock, I guarantee you will never return to eating shop-bought soup! This rich and delicious gut healing oxtail soup is made from my Delicious and Healthy Gut Healing Beef Stock Recipe, which means it has all the health benefits from the stock. It also contains bone marrow which is very nutritious and healthy for the gut and makes the soup thicker, richer and adds flavour.

I once made this soup for some guests we had round for lunch and everybody commented on how delicious it was! When you use your own meat stocks regularly in your cooking, you will discover how delicious your own cooking can be and you will earn the reputation of an excellent cook.

Try to use organic vegetables where possible and either sea salt or Himalayan salt. I buy mine from The Himalayan Salt Store (see below) – see Healthier Options. I also use tomato puree in the recipe, which adds more flavour, but leave this out if you are on the GAPS introduction diet. It can be introduced later on the full GAPS diet (see gaps.me and gapsdiet.com).

OXTAIL SOUP RECIPE

2 pints/1.14 litres homemade beef stock and bone marrow (see Beef Stock Recipe)

7 oz/210g cooked oxtail (taken from the bones in beef stock – see Beef Stock Recipe)

5 oz/140g swede peeled and roughly chopped

1 medium carrot peeled and roughly chopped

1 onion peeled and roughly chopped

1 large or 2 small cloves of garlic roughly chopped

1 dessert spoon tomato puree (leave out if on GAPS intro diet)

Pinch of salt (Sea salt or Pink Himalayan see below and Healthier Options)

  1. Put the stock and bone marrow in a medium size saucepan, add swede, carrot, onion and salt and bring to the boil.
  2. Turn down the heat and simmer for 10 minutes.
  3. Add the garlic and tomato puree (if using) and simmer for a further 5 minutes.
  4. Leave to cool, then blend until smooth.
  5. Return to the saucepan and add the oxtail. Bring back to the boil, then turn down and simmer for about 5-10 minutes to cook the oxtail through.
  6. Serve immediately.
